True to the historic Tennessee tradition, the newly distilled spirit undergoes the famous Lincoln County Process, filtering slowly through 10 feet of tightly packed sugar maple charcoal. This crucial step tames the aggressive, wild bite of the grain before it enters handcrafted toasted-and-charred white oak barrels.

To earn the “Single Barrel” distinction, the Master Distiller selects less than one percent of the distillery’s maturing inventory. These chosen barrels sit on the topmost floors of the rickhouses, where extreme temperature shifts drive the liquid deep into the wood staves.
